- Dried fruit (1/2 cup dried blueberries, apricots, or sour cherries)
- Sweetened or unsweetened Coconut flakes (1/2 cup)
- 2-3 Tbsp. oat flour or wheat germ
- 2 Tbsp. water
- Spices and flavoring (1 tsp. vanilla, a pinch of salt, 1 tsp. cinnamon) YIKES! Andrea forgot to mention these ingredients on the podcast.
Granola Preparation
- Preheat the oven to 350 degrees.
- Melt the fat and sweetener together in a small pot on the stove. Set aside to cool.
- In a large bowl, mix together the base grain, nuts, coconut flakes, and wheat germ.
- Add 2 Tbsp water to the melted fat/sweetener combo.
- Pour the melted fat/sweetener combo into the grain mixture.
- Mix it all up really well (clean, dry hands work well for this task).
- Place in a single layer on a large jelly roll pan. If you like clumpy granola, press down hard on the layer.
- Bake for 30 minutes. For clumpier granola, only stir once. For less clumpy granola, stir every 10 minutes.
- Pull from the oven when golden brown and fragrant. Set aside to cool.
- Add dried fruit when cooled, if desired.
