Ingredients
- 2 packages Biscoff cookies (14 ounces total)
- 1 Cup (16 tablespoons) butter, divided
- 1 1/2 Cup Biscoff Cookie Butter
- 1 Cup powdered sugar
- 1 Cup chocolate chips
- 1/2 Cup heavy whipping cream
Instructions
- Crush the Biscoff cookies into a fine crumb using your food processor (easiest), or by placing them in a Ziploc bag and smashing them.
- Stir together crumbs with 8 tablespoons (1 stick) melted butter until combined. Press into the bottom of an 8×8 pan lined with parchment. Freeze crust for 10 minutes to set.
- Add the remaining 8 tablespoons (1 stick) of softened butter, 1 1/2 cups of Biscoff Cookie Butter and 1 cup powdered sugar to a large mixing bowl or stand mixer. Beat on low speed until smooth and creamy. Pour onto frozen crust, and place back into freezer.
- In a small saucepan, bring heavy whipping cream, to a rolling simmer over medium heat. Turn off the heat, add the chocolate chips, and let sit 5 minutes until melted. Whisk until completely smooth. Pour the chocolate layer over the cookie butter layer. Refrigerate, covered, for 1 hour until ready to serve.
