It’s Week Two of November birthdays and anniversaries month and our hosts are celebrating with cupcakes and cheesecakes! Andrea has been baking the Lemon Drizzle Cake, which ended up slightly sunken in the center, perhaps from overbeating? She also made the Pane Bianco from King Arthur Flour, which turned out to be a bit of a disappointment – while pretty, it was somewhat bland. The rest of Andrea’s week is busy with her annual fruitcake prep, a graduation ceremony, a bake sale, and a birthday cake! For the cake, she’ll be using her new Smitten Kitten Every Day cookbook. Meanwhile, Stefin traveled to Scotland for half-term and had a Scottish cheesecake made with crowdie cheese, which she’ll be re-creating from Paul Hollywood’s Pies and Puds cookbook. Finally, Andrea is investigating rumtopf (rumpot), a fruity treasure that Stefin has experimented with a bit and recommends serving over ice cream.
Both hosts selected a cupcake that was reminiscent from a previous episode. Stefin chose a Boston Cream Pie Cupcake from the Life, Love and Sugar food blog. Stefin recommends a cupcake corer when coring the cupcakes, and suggests making the recipe in stages, since it is 24 steps long! Overall, she gave thos recipe a big thumbs up, and said the recipe was cute and delicious. Andrea selected the Marshmallow Filled S’Mores Cupcakes from Sally’s Baking Addiction and had success with those as well. Like Stefin’s recipe, it required several steps, but can be done in stages. Another cupcake success!
Up next is Mary Berry’s American Baked Cheesecake. Will Stefin be able to find the cream cheese she’s always used to make cheesecake? Stay tuned for next week’s episode to find out. What a fun first year it’s been! Preheated is turning one and Listeners gave us some of their favorites from the first year. The Chocolate Chess Pie from Episode 16 was nominated by several listeners, along with the Roasted Strawberry Buttermilk Ice Cream we made in Episode 30 during the hot summer days. Finally, some of our listeners are going to attempt our homemade fruitcake and eggnog!
