Episode 161: Urgent Brownie Alert

Stefin’s perusing the Waitrose Weekend and pondering the latest way to save the environment…might coffee logs be the answer? According to the manufacturer Bio-Bean, these eco-friendly logs burn 20% longer and hotter than dry wood, and emit 80% less carbon. Andrea’s excited about this new product and vows to drink more coffee to contribute to the cause.

Next up, Listener Cory from New York is asking about a few products he tried during a holiday trip to Britain, and hoping he can find a US equivalent: full- and half-fat “pouring cream.” It could have been the extra thick single cream and the half-fat extra thick cream from Waitrose, but Stefin wonders if it wasn’t a pouring custard, which is a big hit in her family (and comes in full- and half-fat versions). She agrees with Cory, it wasn’t a crème fraîche or heavy whipping cream — but more like a thin custard or pudding. Right after they recorded this episode, Stefin ordered a Bramley apple and pear crumble at a pub, and look what came on the side! Want to make your own? This recipe from Sainsbury’s might be a suitable alternative.

Stefin loved this Bramley apple and pear crumble, especially because it came with a dedicated jug of pouring custard on the side!

Recipe Review: Nigella’s Emergency Brownies

Nigella says “This is for those times you urgently need a brownie, but don’t want to make (or, rather, can’t justify making) a whole batch.” (Please note: The Preheated hosts don’t think you ever need justification to make a whole batch of brownies!) Andrea used pecans while Stefin used toasted walnuts, and both hosts used semi-sweet chocolate chips. Don’t skip the nuts and the chips, the hosts think they are necessary to give these brownies structure.

Andrea tried to build in some portion control and make this treat in her jumbo muffin pan (four brownies), which took 25 minutes to bake at 340F. Stefin bumped her temp up to 170C Fan, and still had to go a bit longer than the recommended 15-20 minutes to get her brownies completely baked. Both the hosts absolutely loved these brownies and recommend them for anytime you need a chocolate fix!
