This Week’s Bake Along: Butterscotch Cake with Salted Caramel Buttercream
Kicking off a month of celebratory “one-layer wonders” Andrea’s picked an over the top Butterscotch Cake with Salted Caramel Buttercream from Bake from Scratch magazine, that features four of her favorite words (and flavors). While the cake itself seems straightforward (once Stefin gets over her butterscotch morsel sticker shock, and makes her own cake flour), the hosts will be challenged by the Swiss meringue buttercream — a first for both of them. Read the recipe thoroughly (there are three main components, including a homemade caramel sauce), and do what you need to do to break it down (up to and including buying a good quality prepared caramel sauce). Is it time to get started on Christmas cookies? That’s like asking Santa if he wants a cookie! A resounding YES! I start looking at cookie recipes and my collection of Christmas cookie magazines before I buy Halloween candy. I look for inspiration and a “new cookie” to add to the list of cookies I make every year. This year I’m adding the Eggnog shortbread cookie trees as featured in Bake from Scratch magazine. They had me at “spiced rum”! I’m also trying the Chocolate-Orange Sablés, also in Bake from Scratch (vol 1), and the Holiday Crinkle Cookies from Food52. I will also bake my tried-and-true favorites: mitten shaped gingerbread, biscochitos, rosemary walnut biscotti, chai cookies that look like pinecones with the help of sliced almonds, candy cane cookies, molasses cookies, and holiday biscotti. Baking Christmas cookies is very special to me. Three friends and I have been getting together for a baking day in early December for the past 12 years. At the end of the day, we have 45 + dozen cookies we package up for family and friends. On your mark, get set, preheat those ovens, and BAKE!
The best place to buy butterscotch chips is at Target. In fact, all of the Target brand (Market Place) baking ingredients are cheaper than most grocery stores and they always are on the Target circle app to get even more money off! I always shop there for all my baking chips.
