Stefin’s back from a recent trip to Wales and singing the praises of a Welsh cake, which is a bit like a scone cooked on a griddle, and Bara Brith, a spotted bread that reminds the hosts of their beloved fruitcake. This warm loaf is filled with dried fruit and tea, and is a great way to introduce teenagers to dried fruit breads.
Recipe review: Nanaimo Bars from City of Nanaimo
This three layer Nanaimo Bar recipe from the City of Nanaimo has the hosts raving about all of their favorite dessert ingredients combined in one single dish. In the bottom layer, Stefin substituted rich tea biscuits for graham crackers, and ground almonds for the chopped almonds, while Andrea used her leftover Nilla’ wafers from the No Bake Ice Cream Sandwiches from Episode 133. Also, Stefin scored some sweetened, flaked coconut from a friend while Andrea used the unsweetened flakes. For the middle layer, Andrea was able to find some Bird’s custard powder in the British section of her grocery store, although she did add a bit of vanilla to pump up the flavor. Stefin used chocolate chips in her top layer, which she might change next time, as it made her top layer a bit too thick. Andrea shared some cutting tips from Listener Jeanne that will help avoid cracking, and both hosts are going to cut their bars into bite size pieces next time.
Blue Ribbon Awards for July
After a struggle to choose, Stefin awarded this month’s blue ribbon to the Nanaimo Bars from The City of Nanaimo, while Andrea went with the Lazy Daisy Cake from Tori’s Kitchen. Now that the hosts have covered Round and Square themes, is Triangle in their future?
The hosts will be taking their annual summer hiatus in August, but don’t worry, they’ll keep everyone entertained with a series of short and sweet “Quick Bite” episodes.
