“19 for ’19” Baking Resolutions
The hosts are having so much fun compiling their “Nineteen for ’19” Baking Resolutions! Though the final list is still a work in progress, they each shared seven personal goals, plus four from their inspired listeners. And several listener suggestions were so good they’re considering devoting an entire month (or year!) to them! Stay tuned for the final list, including the 19th resolution, later this month. Recipe Review: Yukon Gold Potato Cinnamon Rolls
Perhaps there was a reason this Yukon Gold Potato Cinnamon Rolls recipe has been languishing, un-made, in Stefin’s collection since 2009: Both hosts struggled with this mashed potato-infused breakfast bread. Stefin agreed with the comments in the online recipe warning about an overly sticky dough, and ended up adding almost two extra cups of flour to her mixture at kneading time. She didn’t have a great rise on the rolls, and, though she liked the thick cinnamon-sugar filling and frosting-like icing, thinks she’ll stick with her go-to cinnamon roll recipe from Better Homes & Gardens.
Andrea spilled about half of her potato mixture during a mashing mishap (say that three times fast!), but thinks it paid off in the end, as her dough wasn’t sticky, and she got a great, fast rise. Though the recipe says to shape the dough into a dozen rolls, Andrea made 15 and still felt the size rivaled a Cinnabon. Ultimately, though, since neither Andrea nor her family are big cinnamon roll fans, she’ll be concentrating on sticky pecan or orange rolls in the future.
This Week’s Bake Along: Baked Spinach Lemon Doughnuts with Lemon Glaze from Veggie Desserts
Though both hosts have put spinach into their share of savory bakes over the years, neither one has blended it into a sweet treat … until now. Here’s hoping the Baked Lemon Spinach Doughnuts with Lemon Glaze from Kate at Veggie Desserts will be the start of a new love affair. To make the spinach puree, Andrea will rely on her stick blender, and Stefin will use her food processor. Both hosts will be using their mini-donut pans, and will cut back on the baking time accordingly. (Andrea also plans to add 1-1/2 tsp. salt, as she’s suspicious of any recipe that’s salt-free.)
Important! Remember to add your baking powder with your flour in step 4, as the recipe doesn’t specify this in the directions.
How to Host a Cookbook Swap
Inspired by the Lazy Genius podcast, Andrea recently hosted a cookbook swap, and has all the details for listeners who would like to plan their own:
*Invite at least 10 people but no more than 30. Andrea had about 25 attendees;
*Gather your books ahead of time and organize into categories (holiday, appliance, bread, etc.);
*Attendees browse for 30 minutes, then claim books (like a silent auction);
*First come, first serve — attendees wrote their name on an index card to claim the book;
*Be prepared for “leftovers” — Andrea took hundreds of books to the Goodwill;
*Remember Little Free Libraries if you can’t do a large swap — these are international “leave one, take one” huts that can be treasure troves of all kinds of books.
