In the third of four August Quick Bite episodes, Stefin shares her love of chutneys and curds. If you’ve never made these delicious and versatile condiments, you’re in for a treat!
Curds are a creamy and smooth condiment made with eggs and butter, and are popular on British breakfast and tea-time tables. Lemon curd may be the most well known, but there are tons of variations. Nigella Lawson’s Passionfruit Curd is a bright, tart and gorgeous curd, for those listeners lucky enough to have ready access to this fruit.
If you can’t easily find passionfruit, however, Stefin has created an equally pretty and tasty Ruby Red Lemon Curd.
Up next is a Spicy Blackberry Chutney from BBC Good Food (with a few modifications). This gorgeous purple pickle combines blackberries, ginger, mustard and white wine vinegar. Do read the comments on the recipe, as many listeners (and Stefin) found the cooking time much longer than the recipe stated. Stefin also likes to add half a grated apple and a few squeezes of fresh lemon juice to add natural pectin and help the chutney thicken. She also likes substituting apple cider vinegar. Chutneys are very forgiving of experimentation!
