Pizookies™ and Fudge

Andrea was a guest this week on The Food Show with Tom and Mary Anne Fitzmorris and shared some easy ways to beat the heat with summertime desserts.

The pizookie is a dessert Andrea discovered a few summers ago. Pizookie™ is actually a registered trademark with BJ’s Restaurants and Brewhouses, so you may also see it called a skillet cookie. This combination “pizza + cookie” is a great way to cap off the end of an evening without heating your kitchen.

Pizookie Instructions

Heat your outdoor grill to 425 degrees. Spread cookie dough (homemade or store-bought, we don’t judge!) into a six inch cast iron skillet about 1/2 thick. Bake over indirect heat for about 20 minutes. You want the edges crispy while the center is still gooey. Top with a scoop of ice cream, serve and enjoy! Andrea recently made this with Josephine Estelle’s Chocolate Chunk Cookies and it was marvelous. Here’s another great Pizookie recipe from Chelsea’s Messy Apron.

National Fudge Day

It’s hard to think of fudge in the middle of June but when National Fudge Day rolls around, you have no choice! Andrea shared Donna Bishop’s Happy People Fudge recipe with Tom and Mary Ann and enjoyed discussing why this recipe requires no candy thermometer and is fool-proof.
